White Rocks?

I just drug home six white rocks (I think, anyway--two seem to be laying white eggs, and the other four brown, so at least four of them seem to be WRs) and notice that they are listed as dual purpose bird.

If I use them for eggs for a couple years, and then actually muster up the courage to eat them, how edible will the meat be by that time?

Good! A little tough but you can can it and it will be tender or cut it fine for stir fry and this is good too. Some folks like to crock pot an older layer.
