Who are your customers?

Ok guys. If you sell eggs, who are your customers? People who regard them as novelties? People using them medicinally? Foodies? People from certain countries? I'm doing our farmers market and I've been met with "ew you can eat a quail/duck egg?" and a few "I love quail eggs!" Who is your typical customer and how did you find them? And I know that every so often there's threads asking about price but I'm curious about that too. Our grocery store sells them for .65 cents a piece. That's double what I was planning on charging. We asked and the daft hey go through a lot of them. But how do I find the people that want quail eggs?
 
My customers are my parents- and broody hens, who both reward me with allowing more chickens. There is a local farm where I live that sells quail eggs, and they sell out REALLY fast. It is difficult to get them.
 
Definitely health conscious people who eat mostly organic. The "trader Joe's" type customer if that makes sense. Id surely recommend starting a basic website or using ebay to supplement your sales.
