Who Is Serving a Meat Bird For Easter?

HI all!
Having family and friends over for Easter at our place tomorrow. Have a few cornishx in the fridge but they wont be the main dish. We have decided to serve the turkey hubby got free from work. Its 26lbs way to big for our family of four but perfect for a gathering. I decided to cook one of the cornish tonight for dinner and use the left overs for mini chicken spinach puffs. It will be my first time making spinach puffs.

Is anyone else serving one of their birds tomorrow? If so what are you making ? And how did everyone like it?

Whatever "mini chicken spinach puffs" are, they sound freaking amazing.

It's already Easter where I am and we went hunting for wild chickens this morning. They weren't raised as meat birds but the second they hit the ground that's what they became! They aren't good roasting birds, but maybe I'll try making one of them into some puffs...
 
So the puffs where a hit! I made 2 dozen with only 2 left. Everyone loved the fact that I used my own home grown bird. I also used a duck egg instead of a chicken egg. My mom in law was a little weirded out about that but after she had one changed her mind. I also used bone broth from my broiler in the gravy and stuffing. I did not tell them that I used everything even the feet when making the broth. But what they dont know is delicious ;)
