How far is your coop from her house? On the drawing it looks like it is very close.
While she sounds like a hateful person and my first reaction would be to screw with her, I think in the long run, it would be better to try to resolve the issue if possible. I think common courtesy dictates that we have an obligation to our neighbors to allow them the peaceful enjoyment of their home to the extent possible. I was willing to move my crowing roosters to the back of the property when my sister complained that they were too close to her bedroom, I should be willing to do the same for a neighbor..... even if I didnt like her. The same way that I would hope a neighbor would respond if I were to complain about their barking dog or loud music.
I also think that as animal owners we have a duty to our animals to keep them safe, so moving your chickens away from her would be sensible. Or, perhaps you could just cage your roosters separately on the other side of your house. They could have conjugal visits with the hens as needed, LOL.
