I just treated myself to a new toy.


Thinking a whole chicken. I am sure some of you have similar grills/smokers let me know your favorite whole chicken recipe. I don't have a standup chicken cooker yet but might pick up a ceramic one today if I can find one. I am not willing to use an actual "beer can" holder.

Not picky on recipe far as if you offer standup, split, regular breast up roasting whatever.

Unfortunately the first meal will be store bought chicken but I have some future candidates in my 7 week old straight run layers

I learned to spatchcock a chicken and really like to grill them that way. Basically a butterflied chicken, but it makes the whole chicken cook evenly. Really tasty and easy to divvy up once cooking is done.

I love spatchcocking a chicken. Makes it cook in like half the time! I mix up a dry rub with S&P onion and garlic powder plus paprika and if I want it a little spicy I add chili powder or cayenne. rub the chicken with either butter or olive oil then sprinkle with the rub mixture Yummy!
 
I use olive oil mixed with a little ghee spread on the skin side of the bird and then sprinkle the oiled bird with garlic powder, seasoned salt, fresh ground pepper, and a touch of ground sage/poultry seasoning (whichever I find first in the cupboard). I can't wait for my herb garden to grow. I would love to add some fresh herbs to my grilling.
 
I bet opening the bird up like that makes it easier to get some smoke flavor into it I have an abundance of applewood, think that would pair well? Might try this Monday, the wife and kids have requested pizza tomorrow.
The local meat market/grill store I got the grill from didn't have any refrigerated whole chicken this morning, so he made me an offer I couldn't refuse on a 6lbs pork butt. Being my first attempt at slow cook on a grill and my first cook on a ceramic grill I had some temp control issues. It was good but I only got the meat to 180 and it really needed to be 190 or so to shred right.

I foresee many a chicken crossing that grill.

Please keep the grill ideas coming. The spatchcock sounds great for weeknights, anyone have any "low and slow" chicken recipes? This grill really shines for long cooks.
 
Does your new grill have a rotisserie option?
I made rotisserie chicken for supper last fall and it was fantastic! I have a rib roast in the freezer and am thinking of cooking it on the grill with the rotisserie.
 
Far as I know not a rotisserie option, and it actually works a lot like a convection oven, don't think a rotisserie is the ticket. I might get a ceramic vertical roaster, beer can chicken without the burnt can chemicals.

The top and bottom are gasketed to seal when closed, temp probe wires are all I can get in it closed.

Between a power outage at work yesterday morning and a kid with pinkeye I had time to do a whole chicken yesterday, just a simple roasting and the smoke was nice but I didn't manage to crisp the skin, think I need to jack the temp at the end for that.
