Why are ameraucana roosters rare?

everything I have been reading online states that the roosters are rare, but are generally docile. I was looking for more information on behavior and what to expect as this is my first time attempt at keeping a rooster

My Ameraucana rooster was great with the hens except the lowest on the pecking order. Then he started attacking us, eventually he was in a stew. But it is all about the individual chicken not the breed
 
That isn’t a Americauna rooster in the picture, it’s a Easter Egger, which some people call Americaunas but is actually just a mutt blue/green Egger and is not the true Americauna. The true Americauna is Rare.
 
Ameraucana is the correct spelling. If spelled any other way it’s just another name for Easter Egger used by hatcheries to confuse people.

Your bird actually looks like a Blue Wheaton Ameraucana but the leg color looks off. Where did you get him?
He was suppose to be a bantam from my local feed store, I have had issues with them mixing breeds and mislabeled chick's in the past so I generally wait till they are older to identify them
