Why are my hard boiled eggs difficult to peel?

Nope, it's because they're fresh! Hardboiled eggs are actually easier to peel the older the eggs are. Putting a pinch of salt in the water when boiling them is supposed to make them easier to peel. I've also heard that putting in a teaspoon or two of vinegar helps.

I've noticed it and my customers a have to. Is there a deficiency is there feed?

No, that is a good sign of a fresh egg! Older eggs like from the store peel easy bc they have more air inside and yolk and albumen are somewhat degraded. Eggs from the store can already be 6 months old when purchased. Yuck!

X 3 on the freshness. If you're wanting to make deviled eggs, let them sit in the fridge for a few hours with the shell on after boiling them.

There are also some nifty tricks for peeling them. Most of the ideas involve creating a cracked mirror effect on the shell. My favorite way to peel an egg is to drop it in a mason jar with about a third of a cup of water. Then I put the lid on and give it a good shake until the shell is well cracked. After that, the shell can often be peeled in one piece. There's always an egg or two that won't let go of its shell for anything.

One blurb I read when I was looking for some new egg recipes said to be sure to look for eggs that were close to their expiration date because they would be easier to peel. The author forgot to mention that those same eggs would be pushing "ancient". :/
