Why bleed them out?

I have read about a few different ways of killing the animals, and so far I get caught up on the actual cutting the throat part to bleed the animal out. And I wonder if someone could spell out they why's, and why nots if you don't bleed them out.

I did find a jewish link to read, basically jewish law prohibits consumption of blood.

You'll want to bleed them out because it's better for the meat. It tends to go rancid quick. Plus it makes things less messy than they already are.
 
It also improves the flavor to bleed them well. Also the appearance; avoids those dark stringy things that are blood filled arteries and veins.
 
I think I should take your advice flock mistress... 6800 posts and counting.
 
Blood spoils quicker than the muscle tissue. Also there is the fact that it makes your meat more presentable. If you are going to do it, do it right.
