Why is it so hard to find good quality chicks?

I'm on the hunt for some chicks this Fall and am struggling with finding good quality chicks. Here's the problem... I have chickens for eggs, not show. With that being said, I still want beautiful chickens! I am willing to pay extra from a breeder, but I do need female chicks only. Does anyone know of a breeder who sexes? The breeds I'm most interested in are:
Welsummers
Salmon Faverolles
Ameraucanas
Blue Laced Red Wyandottes
Marans
Also, is there a chart somewhere on BYC that rates and reviews the breeders and hatcheries? I've hunted, but haven't came across anything. Any help would be greatly appreciated!

Hatcheries tend to be the most reliable for sexing chicks. Also, you are more likely to get true breeds except for the Ameracaunas from them. Two hatcheries somewhat close to you with reliable reviews are: Murray McMurray and Cackle. I'd look at their availability you can usually get mixed hatches from them. Hope this helps.
