Wild chickens

I've always done it at night. I grasp them from behind, my thumbs closing over the wings to stop them flapping, and gently lift them down.

If you are going to do it in the day, why not set up a bunch of herding fences so you can work them into a pen with a high cover over it, like they do with wild horses... except of course, horses can't fly and don't need a covered pen... and then with a lot of people, work them in there. Or, if they are tamer, lure them close with food and throw a big net over them.

Way less stress to catch them at night, though.
