I'm in the same boat - these are my first chickens, I got them at three days old and they just freak out and run and climb all over each other trying to escape from me if I try to pick them up. They come running if I hold a strawberry into the brooder for them and they will eat it out of my fingers, but if I try to pick them up its like a rodeo. We have been handling them since they arrived and have been so gentle and try to give them treats when we hold them (which they refuse to eat) - it is sad because I was really hoping for birds that would let us handle them. I'm worried I won't be able to let them free range because they are so eager to get away from me.

I got three EE's from the feedstore when they were about one week old and are now 4+ weeks old. They are so flighty! I too am hoping they settle down when they start laying!
 
Yeah, I have 2 EE and they are really nice. One of them is houdini and whenever I let her out in 5 sec. she is on top of the coop. My parents and I have to go on "Easter egg hunts" everyday!! lol
