will a hen lay if I try and watch her

Mine stay in the box a very long time after laying. Like maybe an hour ! These are first time EE. They stay the longest. My adults typically stay maybe 15 min.

My hens couldn't care less if I watch them lay. They lay even if I'm using power tools in the coop.
Those annoying pests never let me work in peace. Even if they already laid, they pretend they need to lay again.
