As you've already figured out, you need to answer some basic questions about what you want from your birds and your climate for good breed suggestions.
I live in North Florida so the heat is the worst. Hubs and I were thinking when we build the coop I want to put outdoor fans to hang from the ceiling to help keep the chickens cool.

I've had chickens in FL and am familiar with the heat & humidity. You can use a fan to aid in blowing the hot air up and out of the coop (can help with the ventilation) but blowing fans directly on the chickens isn't necessary.

Consider building a large coop that offers at least 4 sq ft per bird with large overhangs on the roof then make the top half of one or more wall open air by not siding it but instead securing 1/2" hardware cloth to the pressure treated studs instead.
Also provide 1 foot of roost space per bird ensuring that there is at least 1 foot of horizontal space between each roost bar and the walls.
