My chickens don't usually go for produce as their first choice, either. They go for high-protein treats or their soaked seeds first, in my experience, followed by their layer feed and then anything they can get while free-ranging. Veggie scraps are right at the bottom of their preferences, but I do have some that will go for them more than others.

Welcome to BYC! Some of mine will only try something after multiple attempts. Others will gobble up everything in sight.

Anytime you introduce something new to the diet it will take a few times before they eat it. Don't be so quick to remove it. Just toss everything in the run and they will eventually get around to trying them. They will pick out their favorites first and might not want anymore that first day. They will pick at the rest over the next few days.

How long would it be safe to leave produce in their coop run?

I just leave it in the run where it just becomes part of a large spread out compost pile. Eventually it gets eaten.
