I heard that with chickens they taste better if you cook them right after processing than waiting 3 days to cook them
Is it the same with turkeys?
This is our first turkey we are eating from the farm ( a narragansett tom)
And my wife found it hard to eat one of the extra chickens I slaughtered
So ended up taking the rest of them to the auction instead of the freezer.
But this turkey thinks her fingers are yummy turkey treats so she cant wait to eat him.
So real important that it turns out good

You cannot get through processing a turkey before it goes into rigor mortis. I can feel mine going into rigor mortis while I am still plucking them. They need to have a rest period so they can pass through rigor mortis or you will have meat that is too tough to chew.

I don't know where you heard that falsehood about chickens but the flavor does not degrade with aging them.
