Wing sexing is only accurate in the first few days of a chickens life, (couldn’t tell you about quail) and they have to be bred for it.

Seven weeks old is old enough to vent sex them if they are not feather sexable. If you are not sure if they are feather sexable, you can post pictures here. Make sure to get a clear view of their heads and chests.
