Tonight my parents left for a trip to the Czech Republic. They are going with a tour group and spending a lot of time in Prague. I told my dad to go see the Bone Church there. google Bone Church in Prague. It is eerie and cool! They'll be gone for a little over a week. It sounds like a cool trip! My maiden name is Polacek which is Slovak. So my father calls this his trip to the " mother land" :D.

Then on Sep 22 my Mom is taking myself and my 5 sons, my sister and her 2 sons, my other sister, and my Dad to California!!! It will be a short trip. Figuring 2 days of traveling back and forth, and 3 days for fun.

We will be visiting with family on one of those days. My uncle recently got diagnosed with cancer, and since he already suffers from heart failure, this is probably it. They can't treat as aggressively because of it, and he's in his 80's. Mom wants to see him one last time and show us off to her sisters out there. I hope he's not too sick and in the hospital when we get there...:(

We are also planning one day for Disney and one day for Legoland. My kids are waaaaaay excited about Legoland! I am missing out on Seaworld because of it. But there just isn't time to do both.we have to be back by 3:15 on the 27th for my oldest sons play practice. I actually cleared this trip with his director. I wasn't going to do it if it was going to screw up the play! The show opens the first weekend in October so we are cutting it pretty close. But we will be back for that practice like I promised her!

On the chicken front, I had a great egg day. 3 full size eggs and a pullet egg. But I think she actually laid in the nesting boxes for once so that is great!

Well peeps... I'm off to go put clothes in the dryer so kids have something to wear TO SCHOOL TOMORROW!!! I'm having a celebratory cocktail in honor of the event...;)

(oh and it's second son's birthday tomorrow so I have a cake to make and a present to wrap! I think the cake can wait till tomorrow. But the darn boy thinks he should get his big present before school, and his father said yes! So wrapping must be done!) ok.... Nighty night!

Sep 30th, shortly after we get back... Yikes!

Wausau to Sauk City... A long way. Approx. 2.5 hrs. The only person coming from up North is Babylady. I don't think she's near you...?:/

With your tomatoes: the boiling process method with the skins on would be fine UNLESS you plan on eating the sauce cold. Botulinum bacteria thrive in LOW ACID LOW OXYGEN environments. The tomatoes of today are nowhere near as acidic as they used to be, so that is why the pros recommend you pressure can tomato sauce. I bet if you are using heirloom tomatoes and you add enough acid to the sauce, you will be fine. The reheating of the sauce kills off the botulism anyway.

The salsa can be processed in a water bath, Ball has their recipes process for 15 min. They have additional vinegar added to their recipes to insure the acidity level is high enough to kill off the Botulinum bacteria.

Spent time with my duckies and my in-laws tonight...... it was a good evening to make up for an unsettling day.
