Wisconsin "Cheeseheads"

Yep, takes a few days to get over all the good food. We are really blessed to live in this Country and never go to bed hungry, like so many around the World have to.
Here we totally enjoyed wild turkey with all the sides , like long grain and wild rice, stuffing, buttercup squash, mashed potatoes ho-made rolls and fresh pumpkin pie....prolly a adult bev or two and all is well. The key to the best wild turkey you ever had is to brine it for 24 hours....I had nothing but good comments on the turkey...it is so much better than commercial ones...in my opinion.

Just me, Hubs, my mom and Dad here for thanksgiving. Mom brought pumpkin and apple pies. We had turkey, gravy, stuffing, mashed potatoes, candied yams, green bean casserole, and homemade rolls. Plus the 2 pies, for the 4 of us! We all ate too much.

On the hunting front, my 80 year old father crawled up into his tree stand opening morning, and shot himself a 9 pointer at 9 am. One and done. Yay, him climbing up into the deer stand makes me nervous, the old fart. He wouldn't do much all summer because the arthritis in his hip was so bad, but he can climb up a rickety ladder to a tree stand.
 
I feel like we're spinning our wheels over here. Nothing is quite done all the way. We go from one task to another and get a little done here and there but we have so much left to do. I feel like there's so much weather to beat, so we've been doing the barn, but our house is in shambles full of boxes and I so desperately need a desk. Paperwork and pantry items and stuff everywhere! I want to at least have one room settled--but we're not there yet. Arrrghhhhhh.

I made delicious pie this weekend, though.
 
Wyo, on another www site somebody from Wyo reported a foot of snow.. It is creeping up on us folks..
Moving to a new home is always a shambles.
but you have a life time to catch up..

we ate out for thanksgiving. it was real nice, but I really miss the left over dressing.
Yesterday our youngest daughter came out.
Her boyfriend insisted that she come and learn how to make my dinner rolls.
I coached her through a batch for herself.
then I told her to mix up a batch for me, all on her own.. and she did it..
Either she was a fast learner, or I am one hell of a good teacher..

go figure, 20 degrees colder today than it was yesterday ,, and the scooter started ,,,and ran..
the roll recipe is not complicated.
I am going to assume you know all about making bread..
in a cup add 1/4cup warm water. 1 teaspoon sugar and 1 slightly rounded tablespoon of
granulated yeast.. set aside

into a bowl , beat together:
3/4 cup warm milk,
2 eggs,
1/3 cup sugar,
1/4 cup olive oil
(or whatever kind of oil you prefer) .
1 level teaspoon salt .
whip it all up real good..
then at slow speed if you are using a mixer with a bread hook, add:
1 cup flour,
after it is mixed in real good, add
the yeast mixture.
then add another cup of flour.
the dough should be like wet paste now.
keep adding flour until the dough turns into a ball and hangs onto the bread hook.
now increase the speed to #2 .the dough should swing out far enough to clean the flour off of the walls of the bowl.
now go up to speed #3 and the mixer should just want to jump around a little.. let it mix for about 3 minutes . the dough should be tight enough to hang onto the hook, but loose enough to pull chunks loose on the wall of the bowl and be caught and brought back into the main dough on the hook.
take the hook out shape the dough into a smooth ball. flour the bowl and put the dough back into it.
put the bowl into the oven for an hour.
then cut the dough into 24 equal sized chunks. shape each one and put into a lightly greased glass cake pan. I used Pam,
4 by 6 rows . and let rise again for about an hour .
I bake mine at 350F for 20 minutes.
or at 375F for 15 minutes. when the rolls are nice and brown on top, they should be done

tip: before I start mixing the dough. I turn on the oven for about 3 to 5 minutes at the lowest setting. have a sheet cake pan with water in it for humidity ..
take the water pan out before putting the rolls in to bake..


 
Yep Jim, you posted this recipe before, but I couldn't find the byc post from before, to share and save you the retype of it... oh well...but ya we eat these all the time with meals. I remember the time a lady stuck them in her coat to take home from your Christmas party that you attended at the Café I think?

Looks very similar to the recipe I make! So good!
