Yellow coloring in fat

I was processing a heavy Cornish cross hen. When I was cutting the fat to get through to the innards I noticed a yellow substance. It was sort of watery. I wasn’t near the intestines and double checked them to make sure I didn’t nick them. I didn’t. However this yellowish substance was concentrated in a dime size area. It was runny. I went ahead and washed it out. One thing to note is that this hen got bit by some animal, probably a neighbor’s dog, in this area of the hindquarters I’m talking about. It had healed since then, but could it be part of the healing process or leftover from the tissue healing? The bite was both above and below the hind area. Or could be something totally unrelated? Thoughts?
 
was she free ranging/on lots of grass?

when you where processing her did you notice any thing else weird?
She was not free ranging. Just organic feed. They had labored breathing on the 100 degree days but it stopped when it was cool, overcast, or rainy. I didn’t notice anything else weird. I processed her 4-5 weeks late. Compared to the ones I processed on time, she had substantially more fat and thicker fat layers to cut through. Otherwise, she looked fine, just heavy.
