You can absolutely leave eggs out right?

I wash all my eggs with very dilute dish soap and rinse them in hot water. Then I store them out on the counter or in egg boxes in a cool cupboard, but I never refrigerate them. I try to sell the fresher ones and keep any older ones for myself and my boyfriend to eat. Once they get past my rough estimate of about six weeks old, I feed them to the dogs, who love raw eggs cracked over their dinner.

I get between 10 and 20 eggs a day, and in two years I've only ever had three bad eggs. And that includes piles of dozens of eggs I've found hidden behind old straw bales in our barn that could have been there for weeks, and eggs that have been crusted in poo and eggs that were laid in muddy puddles out in the yard.

When I'm not sure about the age of an egg, I just crack it into a small bowl rather than straight into the pan, that way if it IS bad, it doesn't ruin my breakfast or baking mixture.

I suppose for people who live in really hot climates without air conditioning, they might have to refrigerate eggs to prevent them from developing...
 
I also lightly rinse any that are dirty and can't just be wiped off. We store ours on the center island in a glass hen dish. Of course, we have to give eggs away a lot because the dish is only so large.
