I prefer to buy fresh fish from the local markets of which there are many of around here as they buy fish from the fishing captains, etc. It's hugely expensive anymore so we don't do it often but the taste is so much better and I know for certain it's fresh - and local.

Do you ever get Grouper at the coastal markets? I remember when you could buy a whole grouper for a $ a pound when the boats came in. The way to know that the fish is really fresh is in the eyes. If the eyes are clear they are fresh. If milky or cloudy they are edible and safe most likely but not as fresh as clear eyed fish.
 
One of these days when I can get someone to stay here and watch over our flocks we will take a run down to Destin and find a market that gets grouper off of the boat. I'm sure we will blow $60 to $100 dollars but we will put some good grouper in our freezer. We like it cut into strips or what is called grouper fingers. I don't remember the name of the Dive but years ago there was a restaurant on the way out Manatee Ave in Bradenton that had a grouper sandwich where the fish filet was the size of a saucer on a bun that was very, very good. So good they didn't make enough of a profit to stay in business.

I absolutely love Grouper and it is usually what I order if we go out to eat.
There is a fresh market right on the gulf that boaters supply. A neighbor drove me there once when she was buying fresh fish, but she moved away 😞 and I cannot remember the name of the place or even how to get there. It was a little tiny hole in the wall - a shack on the dock really - and might have been obliterated by the hurricanes.
