Authentic Moon Pies might be hard to make. Probably the next best thing, and an easier thing to make, would be Whoopie Pies. I thought these looked good:

Ah, yes, Whoopie Pies! I do love those. I've made them before... I should make them again sometime.
As far as I can tell, a Moon Pie is basically marshmallow fluff sandwiched between two cookies, and then the entire thing is completely coated in chocolate.
