Young chicken eggs

I’ve seen them many times over the years but I’ve never eaten one to my knowledge. My Creole grandmother used to make some very unusual dishes and I may have eaten them and didn’t know it.

She didn’t speak much English and my mother never taught us to speak much French. I will call my mom tomorrow and ask her about that.
 
I read of this once in an Amish cookbook. They used the un-laid but formed eggs for making noodles. Cooked the hen, too, and had a whole chicken and noodles dish.
 
When I got the idea to buy some turkeys on CL this spring and butcher them myself, the hen had a perfectly formed egg in her oviduct. It was so cool!! I showed it to everybody and then fed it to my husband the next morning unbeknownst to him. Buahaha...
