would it be best if I got an older rooster or a baby rooster
I already have these chickens:

2 speckled sussex 4yrs
1 crested cream legbar 3.5yrs
3 new hampshire reds 2.5yrs
1 rhode island red ?yrs
1 unknown looks like a bantam ?yrs
 
I would choose a rooster that someone can’t keep but is really good with his hens and not human aggressive.
A mature rooster (1 year or older) isn’t as hormonal as a young cockerel.
You may also want to consider a bantam rooster.
I actually like them better because they don’t cause the kind of feather loss on the hens backs that standard size roosters do.
They also tend to be very alert and have excellent instincts.
Plus a bantam rooster isn’t likely to injure your bantam hen when breeding like a large rooster might.

I know of many people who have bantam roosters that successfully fertilized standard hen’s eggs and have the chicks to prove it.
I have no idea where people get the idea that roosters can protect hens from predators.
They are an early alert system at best and a bantam can do that job just as well as a standard.
