another of our all time faves....carrot, potato and sausage! hello!

This isn't quiche---it has no crust, but it is super easy and tasty. My whole family loves it. You can mix, match or add other ingredients like veggies and such to your taste.

Oven Omelet

12 eggs
1 1/2 cup milk
1 cup shredded cheese---any kind
1/2 tsp seasoning salt
1-2 cups of meat---any kind
1/2 cup minced onion (i just shake in some of the dried minced)

Beat eggs, milk and seasoning together. Stir in cheese, meat and onion. Pour into a greased 9x13 pan. Bake at 325' for 30-35 minutes or until cooked all the way through. Do not cover. If desired, sprinkle extra cheese on top before baking.

Lazy Cheater's Quiche: <that's me

1 8oz container plain yogurt
4 eggs
2 cups cheese

Other filling stuff - use any or all:
sauteed mushrooms
sauteed onions
fresh or frozen spinach (if using frozen: squeezed dry!)
diced ham
cooked bacon chopped
browned sausage - Italian or breakfast - crumbled

I use frozen deepdish crusts - bake at 375 for 5-10 minutes to dry out so bottom crust isn't soggy
Put your chosen fillings in the crust and top with shredded cheese
Mix together eggs & yogurt & pour over fillings
Bake at 375 until set & lightly browned

How large crust do you need to contain 12 eggs???

I am going to make a pizza quiche tonight. Mozz cheese, chopped pepperoni and mushrooms. Served with garlic bread and marinara sauce.

MMM my fave thing to do with all these wonderful eggs! I like to make a crustless quiche. I fry some bacon 5 to 6 slices...crispy. Set aside
Then mix in bowl - 4 eggs

1 c of cheese..I use a Mexican blend
1 cup of milk
and 2 cup steamed broccoli...I substituted asparagus once and it was delish!
And BACON! (because everything tastes better with bacon!)
Season with salt and Pepper to taste
grease pie plate - pour and bake
I cook at 350 till top is browning and center springs back. *Reserve some bacon for sprinkling on the top as a garnish
EASY! Enjoy!

Oh, you gotta try quiche with a "rustic crust"...it is not my invention but I'd like to think so...

4 boiled (or baked potatoes), grated
1/2 cup butter, melted

Mix, shape in bottom of quiche or pie tin, pour in favorite filling...

Voila!

Hogs and quiches to you.....
