Your Favorite Quiche Recipe?

I have eggs overflowing and had to do something with them tonight after seeing this quiche. I made a quiche with homemade pie crust (I had some frozen in the freezer/easy to thaw). Pressed into a casserole dish, layered sliced carrots, thawed and squeezed 16 oz pkg spinach, 2 handfuls of sliced mushrooms, covered with 2 cups shredded colby/mozzarella mixed with 10 beautiful farm eggs from the girls. Topped with another handful of mushrooms and baked at 400 degrees for 30 minutes in the toaster oven. Can you smell it?

I usually make that particular strada as a brunch or easy supper. LOL....and with real crabmeat when I can get it.

For some other crust variations, these might be of interest:

Chicken Tart with Potato Crust

Prosciutto or Ham Pie with Pasta Crust - You could change the filling to something 'quiche-like' with eggs.

Robin'sBrood - if you have extra eggs - do you have dogs? i make a huge 'dog food omlette' for mine - cuts down on costs and keeps 'em happy
