I am making Zucchini bread with fresh eggs and a big old zuchini from my garden. I can't wait to see how it turns out.
I just did that last week! Isn't it great! I wish I had a food processer....it was a real chore grating that zucchini.......but it turned out delicious!
I'm with redhen, what recipe are you using? I've never made zucchini bread, but I sure do love it when others bake.
I found this delicious one on http://www.allrecipes.com and it is SO easy! 3 cups all-purpose flour 1 teaspoon salt 1 teaspoon baking soda 1 teaspoon baking powder 3 teaspoons ground cinnamon 3 eggs 1 cup vegetable oil 2 1/4 cups white sugar 3 teaspoons vanilla extract 2 cups grated zucchini 1 cup chopped walnuts 1. Grease & flour two 8x4 inch pans. Preheat oven to 325 degrees F (165 degrees C) 2. Sift flour, salt, baking powder, soda and cinnamon together in a bowl 3. Beat eggs, oil, vanilla and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans. 4. Bake for 40-60 minutes or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan and completely cool. Prep time: 20 minutes. Ready in 1 hour 40 minutes. Servings: 24
That is the EXACT recipe I used, and I also got it from the same website....allrecipes.com! I left out the walnuts because I didn't have any. Very nice texture and delicious! It's so rewarding using your own eggs and veggies!
I love allrecipes.com. I think its my favorite recipe site, along with King Arthur Flour. Looks like a very good recipe!
if you want the bread super moist, add a large box of vanilla pudding and increase oil to 1 1/2 cups. DELICIOUS!!!!
