zucchini cake

I have a question for all you cooks out there. I came across a recipe for a zucchini olive oil cake I might want to make. Along with the expected ingredients like flour, zucchini, olive oil, sugar, vanilla, baking powder etc. it calls for 2/3 cup almond milk. I don't have almond milk, I don't use almond milk and I don't want to buy a carton of it just to make this one cake. What I want to know is whether I can use regular milk or water or something instead of the almond milk without making a disaster. Any thoughts?
 
You can use regular milk in place of almond milk. It is just to help bind the ingredients - you could even use water. Almond milk is water and almonds and maybe some other ingredients if it is sweetened. ;)
The milk would provide a nicer texture though.

Haven't made it yet. The thermostat on my oven went kaflooey and it will cost more to fix it than it is worth. I am buying a new stove but it isn't here yet. Until then, no baking. I'll let you know how it turns out when I do.

That's a shame. I am sure it will be fabulous when you make it. I haven't ever had a bad zucchini baked goodie. They are always so moist.

Don't know yet. As I told Sourland when she asked the same thing, the thermostat on my oven died. If you set it for say, 350 degrees you will get anything from 250 to 450, so no baking. I have bought a nice new stove but it isn't here yet. When it comes I will make the cake and tell everybody how it turned out. If it is good I'll post the recipe.
