zucchini cake

On the Zucchini cake, I posted a link to the probable recipe on page 1 of this thread, it looks really good! I'm sure it would be good with either cow's milk or almond milk (it calls for vanilla almond milk). Although it is unlikely anyone has much of an appetite left for it. Wish I could still drink milk and eat real ice cream (developed lactose intolerance). Glad there are substitutes for us (my favorite, coconut/almond) and Ben and Jerry's Dairy free Cherry Garcia (it is the best!). Meanwhile, glad to have that recipe, though the frosting calls for cream cheese, so it is not completely dairy free even with the almond milk...
 
@21hens-incharge I LOVE zucchini brownies! Hands down it is my favorite zucchini recipe. Do you like that yours is more cakey? Mine is more like traditional brownies, dense and gooey. If you'd like to try that recipe I would be more than happy to share.

We do like that it is more cake like. :)
It isn't as chocolatey as we would like but a bit of frosting takes care of that.

@21hens-incharge I LOVE zucchini brownies! Hands down it is my favorite zucchini recipe. Do you like that yours is more cakey? Mine is more like traditional brownies, dense and gooey. If you'd like to try that recipe I would be more than happy to share.
I would be interested in the recipe.
I did not plant zucchini this year though as we have had an issue with the squash borer beetle. But, I won't have any trouble finding any.

Here you go:
1 cup veg oil
2 tsp vanilla
1 1/2 cups sugar
2 cups flour
1/2 cup cocoa powder
1 1/2 tsp baking soda
1/2 tsp salt
2 cups shredded zucchini

Mix the first 3 ingredients, then mix all the dry ingredients (separately from the first 3), combine those two then add zucchini. Bake at 350 for.... well, I don't have that written down. I usually just eyeball it. This recipe doesn't call for eggs like @21hens-incharge recipe does, which is probably why it doesn't come out cake-like.

On a side note... those squash borers... UGH!! I've tried every trick to discourage them but everything has failed. What I do now is plant a second crop of zucchini late June/early July after the borer has laid its eggs. The second plantings never produce as well as the first but at least I get some extra zucchini.

So anyway, I have a stupid question. What’s the point of zucchini desserts? I don’t bake or garden much so I’ve always wondered. It just sounds gross, though I’m sure it isn’t. Is it substituting something and is therefore much healthier?

I think it is the moist texture it adds to the baked goods. As well, it adds a few extra vitamins and a sneaky way to get people to eat veggies. ;)
