What is erythritol?, and where do you get it

AhBee01......... I agree with you, there is tons of info on that site, about all kins of stuff..I was thinking about trying to make mint and just add some green food color to the syrup. You can save the unused syrup and make more but less sweet or you can add 1 more pak of koolaid and more sugar to make another batch. I want to try making some with Krystal light drink mix, but I think it has to have real sugar in order to turn syrupy. Any thoughts?

It is low carb, doesn't give you an upset stomach and has a similar structure to sugar. It isn't as sweet though so sometimes I will add a little bit of splenda along with the erythritol.

I know they say splenda wouldn't work, but I have no idea why!

Because sugar is actually a type of preservative. Splenda doesn't have the preservative qualities of sugar.

Okay, I MUST try this! I am an avid hater of plain zukes (raw is better than cooked/grilled, but still pretty nasty!) but love anything using them... zucchini cake, zucchini muffins, zucchini bread... Om nom nom.

This is making me wish I had planted 2 plants instead of one:) Usually io add them to my pasta sauce, this looks super yummy:)

What temp should i use?? And cook them on cookie trays?

The directions say to dehydrate 14 hrs. then turn them over for 4 more hrs at 125 degrees. I think I could set my electric oven that low, but Not sure about gas ovens, and I would crack the oven door a little so steam can escape easier. I would try using the oven at the very lowest setting if I had to. I have done all my deer jerky in my oven and it turns out great. If you have a cooling rack of some kind that the pieces wouldn't fall through would be good. I use one with little square holes which I use to cool my cookies on, but if all you have is a cookie sheet it probably would still work, just might have to turn them over a few more times during the drying. I would still try it. Also if you have a rack that would hold the pieces I would still put a cookie sheet or foil on the rack below to catch any sticky drips you may get.

This has been declared edible! Followed closely by, 'That's all you made? When are you going to make more? Can you try other flavors?'

Seriously, these are really good. I did the black cherry and have a couple of packets of cherry to try next unless he comes home today from work with other flavors in mind. Instead of dicing them I just sliced them into crescents after I scraped out the seeds so they wouldn't fall through my dehydrator trays.

Too bad my zucchini didn't do this year
