Zucchini

this is stuffed zucchini my way.. i saute' crumbled italian sausage till done. in another pan i cook the scooped out diced zucchini, butter and onions,, when done mix together and add enough italian seasoned bread crumbs to thicken.. put into zucchini shells and top with parmesan. add about 1/2 inch of water to bottom of pan and bake covered in 350 degree oven till crisp tender.. or cook in microwave.. remove cover the last 10 mins to brown tops.. delicious
 
This is delicious and so easy....slice up zucchini and toss it in a ziplock bag with
italian dressing. Let marinade about an hour, then put it on the grill and cook
until done.

This past summer we were over run by zucs from the garden. We started shredding it and put it in scrambled eggs with onion, put it in meat loaf(after squeezing as much water out as we could) . Later in the summer we tried a zuc and squash bake that the family loved. Cut squash and zuc into bite size chunks. Sautee onion and garlic in a little butter. When sauteed pour into bowl of chunked squash and zuc, add one egg, italian bread crumbs, and grated parmesean cheese. mix it all up put in baking dish and bake at 400. I didn't include quantities of anythng but egg because i have a large family and we use about 7 pounds of summer squash and 3 lbs of zuc, per dish. but give it a try and enjoy!!
 
Not fancy, but saute sliced or cubed zukes with onion and garlic. Set to side. Start a grilled cheese sandwich without the top bread, pile the zuke/onion mixture on top of the cheese, top with the second bread slice, finish the grilling, eat it up. A great addition to a grilled cheese sandwich.
 
We saute zukes, summer squash, onion, garlic, and tomato seasoned with a little salt and pepper in olive oil until everything is good and tender. Absolutely to die for! Even my picky eater loves it!

Lightly steam sliced zucchini

Layer burger, catsup, zucchini and cheese. My MIL sprinkled dehydrated onion between the zucchini and cheese to absorb more liquid. Bake til brown and bubbly, about 25 min at 375.

My kids scarf this up! We eat it a lot as it's low carb (if you use sugar free catsup) and cheap, quick and healthy!
