I found this very informative and thorough. I'm considering raising these someday so picking up information as I go and this helps a lot. Especially the part about winter. I didn't know they could be kept outside at all in the winter.
Ault quail can eat chicken feed and chicken feed would be much better than trying to mix your own feed from different seeds.

Not all colors of quail are feather sexable.

So when you say to someone who doesn't have chickens and you say "chicken feed works better than using seeds" by chicken feed the only thing that works is the type for chickens. Adult feed is made as various types, such as the type for meat birds, or egg layer mix. Imho I think that going to the pet store/feed store and getting some finch seed mix, or just getting game bird feed works fine. As long as you give them a source of calcium.
