Grandmas Cranberry Salad

    Ingredients:


    Prepare cranberries-2 days before serving
    1 lb. fresh cranberries
    2 c. sugar

    Preparing Salad-one day before serving
    1 lb. red grapes, halved and seeded**
    1/2 lb. white mini marshmallows
    1 pt. heavy whipping cream
    1 c. chopped pecans

    Cooking Instructions


    Directions for preparing cranberries:
    Chop cranberries by putting 2 cups of water in a blender and adding a handful of
    cranberries. Chop for 2 to 4 seconds. Pour into strainer. Repeat until all cranberries
    are chopped. Drain well, about 20 to 30 minutes. Mix sugar and berries, mix well.
    Cover and let stand overnight.

    Add grapes, marshmallows and pecans to cranberry mixture. Mix well. Whip cream until stiff and fold into salad. Mix gently, but well. Cover and let stand overnight. Before serving, turn into serving dish.


    Note: ** you can use red seedless grapes. This was a "must have" for all holidays. Grandma was adamant that these directions be followed to a tee. It seems a bit tedious, but oh, so worth it!
