Ingredients:
1 c. lemon juice
2 tbsp olive oil
1/3 c. red wine vinegar
1 tsp. oregano
1 tsp. thyme
1 tsp. ground black pepper
1/2 tsp. salt
1 clove garlic (minced)
4-6 boneless skinless chicken breasts or thighs
Cooking Instructions
Combine all ingredients in a large ziploc bag. Slice chicken into strips. Place chicken in bag and marinade overnight. Cook chicken on a Foreman grill (or grill or broiler may be used) until pink is just barely gone! DO NOT OVERCOOK!!! This chicken is excellent with rice, tossed with oil over pasta, or on any kind of salad.
