6 Boneless skinless chicken breasts
1 tsp. curry powder
2 tbsp soy sauce
1/2 c. dijon mustard
1/2 c. honey
Preheat oven to 350 degrees. In a 13 x 9 inch pan, combine curry powder, soy sauce, mustard, and honey with a whisk. Arrange chicken pan, turning once to coat. At this stage you can marinade the chicken in the pan overnight if desired. Cover dish and bake for 45 minutes. Baste well and return to the oven for 15 more minutes. Excellent with rice.
