I’ve made something like this before but didn’t know it had a name.
Lots of recipes here for sweet things but this is proper food. I’ll just have to see if I can squeeze a few eggs out of the still laying chickens and give this a try.:)

You can sub anything you like. Sometimes I use 1 lb of broccoli florets cut up pretty small. Or three large colored bell peppers. The choice is yours. But you might like sweet potato in a frittata! They are more nutritious than red potatoes.
I have just enough sausage to do this - so I'm gonna try this one tomorrow! I would NEVER have thought to use sweet potato with eggs, even though I love 'em and keep them on hand all the time. I can't wait!

You'll love it! The cinnamon gives it a very savory flavor. I literally just make frittatas out of all kinds of veggies then vary the spices. It's so easy and always delish!
