Smoked Turkey Leg Slow Cooker Soup

soup.jpg
Another homemade recipe that I throw together regularly. I love eating whole healthy food but don't have time to cook every day. Crock pot to the rescue!

Ingredients
1 large smoked turkey leg
4-6 stalks celery, coarsely chopped with leaves
1 large onion (any kind), coarsely chopped
4-6 peeled, chopped carrots
1-1.5 pounds peeled, diced sweet potato
1 pound Brussels sprouts, trimmed and cut in half
8 oz bag sliced radishes
4 oz container sliced cremini or white mushrooms
28 oz can crushed tomatoes
1/2 Tbsp seasoned salt
1 1/2 Tbsp Weber Roasted Garlic seasoning mix or equivalent
1 tsp smoked paprika
Qt chicken or beef broth

Directions
In a 6-qt slow cooker, add 1/2 of all the vegetables. Place smoked turkey leg on the veggies then cover the leg with the rest of the veggies. The crock should be FULL at this point. Add more veggies if not.
Sprinkle with seasoned salt, Dash seasoning and smoked paprika then pour chicken broth over everything. Cover and cook on LOW for 7 hours.
Pull the turkey leg out of the soup after 7 hours and put a plate to cool for handling.
Shred all the meat off the turkey leg and stir back into the soup.
This makes about 8 nice sized bowls of soup.
Enjoy!

I eat a Paleo diet which led me to wanting chickens for fresh, healthy eggs. After acquiring my flock, I quickly realized that they play a huge roll in stress management.
I love taking neglected houses and renovating them into someone's home! It is the most rewarding work I've ever done and I loved every aspect of it. So, because I can no longer flip houses, I decided to flip a shed into a coop for me and the chickens!
