Chicken Rice Casserole
1/4 cup butter
1/3 cup flour
3/4 tsp salt
1/8 tsp pepper
1 1/2 cups milk
1 cup chicken broth
2 cups cut-up cooked chicken
1 1/2 cups cooked white or wild rice
1/3 cup chopped green bell pepper
1 cup chopped mushrooms
Heat oven to 350*. Heat butter in 2 qt saucepan until melted. Stir in flour, salt and pepper. Cook over med. heat stirring constantly until bubbly. Remove from heat. Stir in milk and broth. Heat to boiling stirring constantly. Boil and stir 1 minute. Stir in remaining ingredients.
Pour into ungreased 2-qt casserole or rectangulatr baking dish. Bake uncovered 40-45 minutes or until bubbly.
