After cooking up all of the birds we processed I have had lots of litle slivers of chicken, a whole lot of broth and the need to put a meal on the table even though I had been cooking all day for a few days.
I took some of the broth from my roaster and some of the slivers of chicken meat added in some chopped onion, celery, carrots and asparagus tips. Once the vegetables were tender I added in a couple handfuls of egg noodles and simmered for about 10 minutes.
I served big steaming bowls of soup for our meal.
Along side a wonderful chicken salad sandwich made with my own homemade mayonnaise, my little pullet eggs and our chickens.
Our own chickens have provided us with a multitude of really good, fresh, homemade items.
Does it get any better than this?
