RECIPE! Super Easy and Sooo Good! BLENDER PIE

I came across this recipe that was given to Mom many years ago. She got it from her friend Audrey, who is like my second Mom!

It is rich and delicious, very much like a coconut cream custard with a soft "crust" in the bottom.

BLENDER PIE

Put following ingredients into blender, as measured:

2 cups whole milk

1/2 cup Bisquick

3 Tbs. butter or margarine

3-1/2 oz. canned or packaged coconut

4 eggs

1/2 cup sugar

1 tsp. vanilla extract

Blend until well blended, pour into a buttered 8" glass pie dish. Bake at 400 degrees for 25-30 minutes, until custard is set. Let cool, then refrigerate. Serve cold.
 
This sounds really good, I am going to have to try this. I wonder if you could substitute different things other than the coconut?

Might have to some testing on this one.

Going to go on a hunt for the UK equivalents of some of those ingredients and give this a try at the weekend. Sounds delish!

Yum that looks soo good and I LOOVE coconut!

Thanks for posting .. if I only had bisquik I would be making it

to substitute 1 cup biscuit mix

3/4 cup flour
1/4 cup oil
2 tsp baking powder

blend together before substituting.

Alternate:

master mix

8 cups flour
5 tbsp baking powder
1 tbsp salt
1-2 cups dry milk powder
1 1/2 cups oil

Combine dry ingredients and mix well in a large bowl. Combine with oil until it is like fine bread crumbs.

Store in a tightly covered container and store in fridge.
