Butchering by Weight, not age?

My x-rocks are almost 5 weeks. They are big, some bigger than others. I weighed one of the biggest and he was 3.5 lbs.

I am curious if anyone butchers based on weight rather than age. If so, what weight?
 
fryers we go at 6lbs live wieght, you can take roasters to 10 or 11 you can get them to 15 but they get green tenders, you can eat them, but i cant.
 
the tenders in their breast turn green because they dont get enough circulation because the bird is too big. Its pretty much rotten meat. You can eat it, but i wont. Nothing like cooking a nice juicy chicken cutting it up to find green meat.
