A friend from work came over to today to show me how to make her mother's white bread and Nova Scotia Brown Bread. It was alot of fun and the bread was delicious. We had some warm with honey butter!

She also gave me instructions on making raisin bread with the white bread recipe.

Next time we have a day off together we're going to try making some cheese.

Here's the recipes:
Nova Scotia Brown Bread
2 cups of boiling water
1 cup oats
1/2 cup molasses
1/2 Tblsp. salt
1 Tblsp. butter
stir these together and let stand for 1 hour (to cook the oats)

Then dissolve 1 Tblsp. dry yeast in 1/2 cup warm water (let this double)

Then fold the yeast mixture into the molasses mixture.
Next, mix in 4 to 5 cups of flour gradually until mixture is workable.
Knead for about 8 minutes, form into a ball and put in a buttered bowl. Cover with a damp cloth and let rise till doubled in size. Then, punch down and cut dough in half. Form into two loaves and place in greased bread pans. Cover with a damp cloth and let rise again until doubled in size. Uncover and bake at 425* for 10 minutes then at 350* for 35 minutes.
This bread is so good.

Raisin Bread (White Bread)

Scald 2 cups milk, set aside
Mix together 1/4 cup sugar
1 Tblsp. salt
1 tsp. cinnamon

Pour hot milk into large bowl with sugar mixture and 1/4 cup shortening. Stir until shortening melts. Cool to lukewarm. Mix in 1 1/2 cups raisins. Meanwhile dissolve 1 tsp sugar in 1/2 cup warm water. Over this sprinkle 1 pkg. dry yeast. Let stand for 10 min. Then stir briskly with a fork. Add softened yeast to lukewarm milk mixture, Stir. Beat in 2 1/2 cups flour. Beat vigorously. Gradually beat in with spoon an additional 2 1/2 cups flour. Work in last of flour wit a rotating motion of hand. Put on floured surface and knead 8 to 10 minutes. Shape into smooth ball. Don't let raisins protrude. Place in greased bowl, rotating dough to grease surface. Cover with a damp cloth and let rise until doubled. (about 2 hrs.) Deep in a warm place. Punch down and shape into 2 loaves. Place in greased loaf pans. Grease top slightly, cover and let rise again until doubled (about 1 1/2 hrs.) Bake at 400* for 30 -35 min.
If you just want white bread eliminate the cinnamon and raisins.

Enjoy, both breads are delicious. The slice nice, don't crumble and are great for sandwiches!
