What are you canning now?

Kim_NC Well, DH did help with that list. He's great at slicing and chopping! (And he packed 15 boxes for Internet shipments too.) It's only the 2 of us though....no one else to run out of the kitchen or enlist for help.

Usually we sleep from 11pm to 6am....although this morning I was up by 5am. Haaa haha...drinking coffee, not canning!

As a newbie to canning, and I don't have a pressure canner as yet...I see in my Ball book where I can "cold pack" my tomatoes. Now my BIG question: Can I "cold pack" my tomato salsa so my veggies stay in diced pieces and not turn to mush by precooking? Please someone???

Also, since you have so much Zucchini you can shred and freeze in Zip Lock bags to make patties at a later time. I measure mine out into 1 cup piles, wrap in wax paper, freeze then transfer to Food Saver bags and suck all the air out and refreeze. Keeps a good long time that way.

I know this is not really a canning recipe - but since there is a lot of foodies here I wanted to share this easy meal that uses ingredients from the summer garden. Easy to fix after a long day of canning. Will also post in regular recipe section.

Bow Tie Pasta with Brie

3 cups cooked Bow Tie Pasta, drained and set aside
1 Tsp fresh minced garlic
1 cup fine chopped tomato
½ cup chopped and loose packed fresh Basil
¼ cup roasted Pine Nuts (walnuts could be used instead - unroasted)
6 ounces Brie Cheese (triple cream is the best, if you can get and afford it)
¼ Olive Oil
1 tsp salt or to taste
Grated Parmesan Cheese

Heat Olive Oil over medium heat, add garlic and cook just to warm (less than one minute) add tomatoes, cook to only warm through (less than one minute), gently stirring. Add cooked pasta and gently toss/fold until garlic and tomatoes are evenly incorporated. Add basil, pine nuts and Brie cheese. Gently stir until Brie is melted and evenly incorporated. Serve immediately topped with Parmesan cheese.

I lost one of my jars of peach salsa last year. Really REALLY ticked me off!!
 
DH's great aunt is helping me out this week. It's great mental and physical therapy for her. She's recovering from a stroke, and dealing with the depression. What a joy to see her smiling and throughly enjoying herself! She kept saying how proud she was of ME for wanting to can, etc., Nah, tis I who am proud of HER for getting outta the bed, and wanting to do something.

Anyway, we enlisted my 13yr old daughter, so she can learn some about canning as well. She helped shuck corn, and cut it off the cob, and helped snap the green beans. I think she liked it, though she'd never admit it.

Put up:
14 qts. dill pickles
21 qts. green beans
4 qts. corn
6 qts. tomato juice (was hoping for salsa but my tomatos were just too small to bother with blanching and peeling. So I juiced them instead!)

Tomorrow will do:
Salsa
Sweet pickle relish
Blueberry jam


After reading through the posts here, I want some peach salsa, and peach sauce that was used on chicken, pork, etc!! Though sound YUMMY!

I also picked up a 4lb bag of pinto beans after reading on here that they can be canned! We LOVE pintos and corn bread, and use lots of them for chili during the winter. Much cheaper than buying the cans of beans! The beans were $1.99!

Our local grocer has green beans for $.99/lb right now. I'm thinking of buying some to can since my beans are done now.

Hoping the rest of my tomato plants have larger ones on them so I can get some of those canned, as well as salsa, and more juice!

Oh and I was soooo happy today! I thought I was going to have to get a new canner as mine wouldn't hold pressure yesterday, and the thermostat wasn't working at all. Well I called around this morning, and found a small hardware store that had both new gaskets and the pressure guage!!! Got there, and the price was even less than what I had found it for online!!! WOOOHOO!! I was dreading having to buy a new one in order to get the stuff canned this week. I didn't want my produce to go bad while waiting on parts to be mailed. Had convinced hubby I needed to shell out the $114 for one, and wooohoooo for less than $30, I'm good to go!!!
 
NottheMomma - How great that can spend time with your family canning. Like so many things these days that are dieing a quite death its rewarding to see that the art of canning is alive and well.

Tons of peach salsa today. Getting husband help too!
