I have found the most awesome dilled zuchinni recipe. I will have to look it up and post but they were amazing!

Yesterday:

13 pts Peach Salsa
18 pts Pickles
10 half pts Raspberry Jam
9 half pts Blackberry Jam
5 half pts Blackberry All Fruit (no sugar)
9 half pts Blueberry Peach Jam

Our corn is coming off. We've started freezing it. (We don't like it canned.)

We have a ton of tomatoes to work with next, plus peppers and onions. Haven't decided what to make with them this time. Need more Black Bean & Corn Salsa - that's one. Already have canned tomatoes and tomato sauce. I may go with Tomatoes/Okra or a Veggie Soup Base.

Ongoing efforts with the green and yellow beans...my season is about over and I'm not happy with what I harvested this year...gonna have to go down to they farmer down the road to get enough canned I think. Getting ready for the 'mater and pepper harvest.

Anyone have a tried spaghetti sauce recipe??

I can google a million of them, but I would rather have your opinions on recipes you use.....tweaked or not, I'm sure they're better than anything I can google.. Thanks!!

LMAO...DH and I spent the last 5 min laughing.

Well, DH did help with that list. He's great at slicing and chopping! (And he packed 15 boxes for Internet shipments too.) It's only the 2 of us though....no one else to run out of the kitchen or enlist for help.

Usually we sleep from 11pm to 6am....although this morning I was up by 5am. Haaa haha...drinking coffee, not canning!

SooOOOooo...today....*sigh*....
No canning, but we picked our market garden and another small farmer's garden. Trying to get eveything together for market Fri AM and Sat AM. Currently on the porch until morning when we load up...

- about 175 lbs of tomatoes (yes that's 175 lbs, not a typo)
- 2 large crates of peppers
- 30 lbs of squashes
- 50 lb cucumbers
- 50 lbs onions
- blackberries & raspberries
- but only 4 dz corn, still early there
- 20+ dz eggs
- flowers, herbs and such

Also baked 8 loaves bread, 5 mini zucchini bread and 3 packs dinner rolls this evening. Already had mini banana bread and cherry/coconut ready. Not much but the Fri AM market is smaller. We don't move as many baked goods there.

I'm tired. I won't be canning again until the weekend.

My neigbor is teaching me to can and freeze for the first time. I'm loving it!

Last week we canned 25 quarts of green beans, and I froze 6 quart-size ziplocks (is it really a quart??) of corn.

This week I did 10 pints of green beans (she didn't want quarts, but pints - so I'll probably get her half of the quarts back - yippee!) and 6 more quarts of corn went into the freezer.

Tonight though is my crowning achievement so far -- I canned 8 pints of zucchini relish - all by myself! and cooked down some peaches for juice -- she'll be teaching me jelly early next week, can't wait!

Sandee - thanks for the zucchini patty recipe! I copied it down while the relish was water bathing

DH made a small boo boo when planting this spring. Instead of 3 zucchini, 2 yellow squash and 4 melons - somehow he planted 9 ZUCCHINI PLANTS!! We've taken countless amounts to the food bank, and are still swimming in them! So every new recipe helps, LOL!
