Looks like I'm going to be stuck with many pounds of green tomatoes this year. I had such a lovely crop of beautiful tomatoes last year, but this is a complete bust. Even my early ripening tomatoes are green and it's starting to cool down a lot.

So what can I make? Does anyone have a suggestion or a recipe for green tomatoes. Yup, we've had fried green tomatoes already. LOL I was thinking I could make some kind of relish and can it?
 
And I make this one with tomatillos or green tomatoes each year - whichever I have. It's perfect as an enchilada sauce or with other Mexican dishes call for a green tomatillo sauce.

TOMATILLO GREEN SALSA

5 cups chopped tomatillos (may substitute green tomatoes)
1-1/2 cups seeded, chopped long green chilies (fresh or canned)
1/2 cup seed, finely chopped jalapeno peppers
4 cups chopped onions
1 cup bottled lemon or lime juice
6 cloves garlic, finely chopped
1 tablespoon ground cumin
3 tablespoons oregano leaves
1 tablespoon salt
1 teaspoon black pepper

Combine all ingredients in a large saucepan and stir frequently over high heat until mixture begins to boil, then reduce heat and simmer for 20 minutes, stirring occasionally. Ladle hot into pint jars, leaving 1/2-inch headspace. Adjust lids and process in a boiling water canner: 15 minutes
 
If you keep green tomatoes in a DARK COOL place, like a dresser drawer, with each layer covered in newspaper they will keep all winter. I have never done this myself but we have a resturant here that serves them all year and that is the way they store them. Then you can have fried greens tomatoes all year. Another favorite is green tomatoes sliced in half and covered in mozerella cheese baked in the oven until they are soft.
