Simple Rhubarb Torte

Crust...
2 cups flour
1 cup butter
3/4 cup powdered sugar

Filling...
2 eggs
1 1/2 cups sugar
3/4 tsp baking powder
1/4 tsp salt
1/2 tsp vanilla
1/4 cup flour
2 cups chopped rhubarb

Mix ingredients for crust. Press into bottom of 13x9 pan. Bake at 350 until browned. Mix ingredients for filling in order and pour over crust. Bake at 350 for 30-35 minutes. Remove from oven and let cool. Rhubarb can be substituted with any berries or fruit.
Caution: This may be hazardous to your diet.

My puter took a dump just after posting this. Go figure...... Finally back. Just wondering if anyone tried this and thier thoughts. Spring time is rhubarb and asparagas season. First fruits of the season so to speak. Anything from the garden or picked fresh wild in my case with the asparagas is all good. Glad to pass all good recipes.
 
This is my first season growing Rhubarb, and i've never even eaten any, as I understand it, winter & late winter are Rhubarbs peak time here in the Smokies. I was suprised to learn they grow in Siberia and that my mild winters are exactly what they want. Parsnips & Rhubarb are my new winter produce.. yay for plants that LOVE snow & cold!!!

What area of the country do you live in, that your growing Rhubarb so well?
 
Gave it a try tonight, changed it alittle. Wanted half strawberries but didn't have any so used some homemade jam with cup and a half rhubarb. Tuned out good but a little sweet. Needed some cheese cake filling in it.
