Boy that's a long class!

Ya know, we really could put something together like that.

Maybe not quite the ENTIRE SUMMER though...

Just ducking the kids...

Very understandable.

Did you get it replaced or fixed? Sounds like you guys have everything covered; if you have any ?s or want any suggestions on brands etc. I'll put in my 2 cents worth.

A cheese press doesn't have to be complicated or hard to make. Mine is a piece of 5" diameter plastic pipe with holes drilled all over it colander style, and it is maybe 6" high. I cut out a wooden circle the exact size of the inside of the pipe to sit on top. For applying about 10 lbs of pressure, it requires a 26oz can of Hunts spaghetti sauce sitting on top and a blue bungee cord strapped tight over the top and attached to the sides of the large colander that it all sits in. For 20-30 pounds of pressure you slip 2 cans of tuna under the bungee and on top of the Hunts. That creates enough added stretch on the bungee cord to create the additional pressure. For about 50 lbs of pressure, it is all of the above PLUS a can of canned salmon and the red bungee cord. I have made lots of cheese using this method. Works just fine!

Boy, that would be a bunch simpler than anything I would come up with...

Start with 8" thick walled stainless steel pipe and a 1" hydraulic cylinder...

Unless you have a good table saw, probably so. And that is one type of cut that Home Depot and Lowes won't do

I think our Homer will rip it for you. They have a panel saw in which the saw will turn 90 degrees and they just slide it through the rollers. I think...

Ours CAN, but they won't (I tried to talk them into ripping a fence board a few days ago) No can do--if caught they are fired on the spot. There is even a sign that has been there forever saying that they will not do rip cuts and a few other things--ofhand can't remember what the other ones are.
