No they don't need deeper water they will flip/vibrate their bills around to get nostril holes wet, they don't need to submerge nostrils. Deeper water is just asking for a super mess or drowned ducklings

sounds like egg albumen, maybe not enough humidity? Is the gosling out of the shell? If it's out of the shell just use warm water and soften it, make sure it doesn't get chilled when you do this. dry him off well and put him in a warm brooder
Most likely the chicken but no need for the chicken to go, sometimes they do that cuz they need more calcium or the shell had an imperfection, lots of other reasons too. give your chickens some oyster shells :)
