My chicks should begin to hatch next Wednesday. How long should I leave them in the incubator before removing them? I have 23 eggs currently incubating, so if some hatch a day or two before the others is it okay to keep them in the incubator with the unhatched eggs?

I am really new to this but I was told that if there was a white speck on the chicks head it meant it was a rooster. I am not sure if this is the case for all chicks. I am hatching barred rock and red island chicks. If anyone knows different please let me know. Thanks!
Thanks! I do not have a way to gauge the humidity levels, but was told to open and mist them twice a day on the last 3 days. Is that incorrect due to the fact I am not supposed to open the incubator at all?
