Coop looks awsome. Just some thoughts on my part.
Based on the size in the pics I cant see you needing 2 -250 watt lamps. I have one in a 8x12 coop and it never freezes evne in -40 F weather.
Having the lights on a thermostat ? Not sure I like that idea. Wake up the the girls at night...
You can make your own cord out of building wire. Buy a coil of 12 gauge UF (underground feeder wire) and put a plug on each side. Not very flexible but very safe in any length you need. You can also bury this same wire in the ground to create your own underground cable I would stay away from...
My best luck with any rodent has been to have as many weapons in use as possible. Some will not eat poison so put out PB balls, others on glue boards, others in traps. Hit em with everything you go at once.

Fine from a nutritional standpoint because while they are eating some wheat grass, they are undoubtedly getting a ton of bugs too. From a predator standpoint though, only a matter of time till you lose one or more.

Trapping fox can be tough. Very smart. If you have the time you might have better luck on a stake out with a gun. Seems to be there about the same time every day so.... Otherwise for live bait if a mouse gets to ya, how about a barn pigeon?
Dont know about there but in Minn, I don't think youd get more than the value of the hen. About $10. Judges would say take the 10 and go get another hen. Your no better or worse off in the laws eyes. Punitive awards I doubt would apply here.
